There was a tax imposed on the Jews around the time of the Temple
destruction. I believe that many gentiles because of fear of being
considered Jewish and for avoidance of this tax, tried not to show
their connection to the Jews.
But I also feel that at least Matthew was written in Hebrew for two
reasons. First, if the writers were convinced by the Holy Spirit to
write the Word of God, it would have been done in the same manner as
the other Word of God, Hebrew. The apostles continued to be Jews and
did not divorce themselves until they were pushed out, from the
religion of the God of Abraham, Isaac and Jacob. They would never have
put the Scripture of YHVH in a foreign language and give any indication
that this is a new religion.
Second, the Hebrew Matthew is the only known version that makes any
sense of Matthew 23:3 and Matt.23:13&33. Matt.23:3 does not say that
believers should follow the teachings of the rabbis. It says follow
the teachings of Moses. "So take care to do whatever he(Moses) tells
you, but don't do what they tell you for they talk but don't act."
